Chicken & Rice Chow Chow
All the goodness the family needs in this delicious do-ahead dish! Adjust the “bite” by varying the quantity of the peppers. For a more luxurious variation, add the optional ingredients.

recipeIngredients:
• 300 g / 375 ml Tastic Nature’s Brown Rice with
Sundried Tomatoes

• 1 litre water
• 5 ml salt
Seasoning for chicken:
• 5 ml salt
• 1-2 ml cayenne pepper
• 30 ml sunflower or olive oil
• 3 sticks celery, coarsely chopped
• 2 green or mixed peppers, seeded and diced
• 10 ml chopped or crushed garlic (2 cloves)
• +/- 250 ml canned, frozen or cooked corn kernels
• 200 g cleaned, cooked prawns (optional)
• 1 x 410 g tin whole peeled tomatoes, liquidized
• 100 ml tomato sauce
• 5 ml chicken stock powder

• 250 ml water
• 100 ml chopped spring onion


Method:
1. Place the rice, water and salt in a saucepan and bring to boil. Reduce heat, cover partly and simmer for 40 minutes or until the rice is tender and dry.
2. Combine the salt, pepper and herbs and sprinkle over the chicken. Heat the oil in a second large, heavy-based saucepan and stir-fry the chicken for 5 minutes or until golden brown.
3. Add the celery, onion, peppers and garlic and stir-fry for 5 minutes more to develop the flavor. Add the remaining ingredients, except the spring onion, and bring to boil. Reduce heat, cover partly and simmer for 20 minutes or until most of the liquid has cooked away.
4. Add the cooked rice and mix lightly. Adjust seasoning, cover and cook over very moderate heat to heat through. Add the spring onion, toss lightly and serve piping hot.

2. The rules will be applied and interpreted at the sole discretion of Tiger Brands Limited. Participation by the entrants constitutes acceptance of these rules.

3. The competition will run online at www.tastic.co.za, from 15 February – 15 March 2010. To enter, participants must sign in or register at www.tastic.co.za and answer the weekly question on the entry form provided. Entries for the week must be submitted by 2pm on each Friday.

4. The prizes include 20 Tastic Nature’s hampers and 2 Nintendo Wii Fit Plus grand prizes (including consoles and boards). The prizes cannot be exchanged for their cash value.

5. The lucky draws for 5 hampers will take place weekly every Friday after 2pm – namely on 19 February, 26 February, 5 March and 12 March. The draw for the 2 Nintendo Wii Fit Plus (including consoles and boards) grand prizes will take place at the end of the competition on Friday, 12 March.The names of the weekly winners of the Tastic Nature’s Hampers will be published on the Monday following each draw on the Tastic website – i.e. on 22 February, 1 March, 8 March and 15 March. The names of the 2 grand prize winners will be published on Monday 15th March on the Tastic Website.

6. The judges’ decision is final and no correspondence will be entered into.
