Minted Brown Rice, Tuna & Spinach Salad

Ingredients:
200 g / 250 ml Tastic Nature’s Brown Rice & Wild Rice
1 litre water
2 ml salt

Croutons
30 ml sunflower or olive oil
3 slices white bread, crusts removed
diced garlic & herb seasoning

Mint Dressing
30 ml sunflower or olive oil
15 ml lemon juice
5 ml sugar
2 ml salt
10 ml parsley, chopped
15 ml fresh mint, chopped
15 ml spring onion, snipped

Additional Ingredients
1 x 200 g tin
tuna, drained and lightly flaked
+/- 100 g Feta cheese, finely diced
baby spinach leaves, washed and dried
additional chopped parsley, mint and spring onion to garnish

Baked Risotto with Prawns

5 ml sunflower or olive oil
1 onion, finely chopped
10 ml crushed or chopped garlic (2 cloves)
½ red pepper, finely diced
dried chili flakes (optional)
30 ml butter or margarine
200 g / 250 ml Tastic Risotto Rice
5 ml salt
100 ml white wine or water
500 ml boiling water
5 ml chicken stock powder
1 ml turmeric
3 small baby marrows, sliced
125 ml grated Parmesan cheese
freshly ground black pepper
125 ml boiling water
15 ml chopped parsley
+/- 500 g frozen cleaned and cooked prawns
15 ml butter or margarine, melted
15 ml lemon juice
2 ml salt

Lamb Casserole with Fruit and Nuts

Ingredients:
15 ml sunflower or olive oil
1kg lamb neck or knuckles
1 large onion, coarsely chopped
1 cinnamon stick
3 ml salt
2 ml white pepper
1 ml turmeric
2 ml ground ginger
2 ml ground coriander
1 ml ground cumin
30 ml honey or brown sugar
3 ml beef stock powder
500 ml water
50 g dried figs
50 g dried apricots
50 g stoned dates

Rice
200 g / 250 ml Tastic Parboiled Rice
750 ml water
5 ml salt

To serve and garnish
+/- 50 g / 125 ml
chopped nuts
chopped spring onion or fresh coriander

Creamy Chocolate Risotto

Rice pudding to rave about – superb as is but for a festive touch, add the optional brandy or liquer, almonds and cherries

Vegetarian: Yes

Ingredients:
1 litre milk
15 ml cocoa powder
100 g / 125 ml Tastic Risotto Rice
pinch salt
30 ml sugar
30 ml butter
5 ml vanilla essence
15 ml brandy or mocha or coffee liquer (optional)
100 g  dark chocolate, scraped into coarse shavings
250 ml cream, whipped until stiff

Optional Ingredients
50 ml flaked or slivered almonds, lightly toasted
30 ml glacé cherries, finely diced

To Serve and Garnish
reserved whipped cream
reserved chocolate shavings
reserved almonds
2 glacé cherries, quartered (optional)
