Posted in What's Cookin? on 28 May 2010 I love, love, LOVE stuffing myself with risotto when I eat at Italian restaurants. I tried to make it myself once or twice but failed dismally. Then I tried Tastic’s Rices of the World Risotto rice and voila! Perfect risotto, cooked, served and devoured. Personally I’m a fan of mushroom risotto, preferably liberally sprinkled with Parmesan cheese shavings. Anyone else got suggestions for a great alternative?
Seafood risotto is my fave. Get a packet of mixed seafood from Pick & Pay or Woolies, make a basic tomato sauce as your base, add heaps of garlic and you’re done. Even better is if you can get the big chunky prawns or langoustines. Just don’t overcook them…it’s such a waste.
