Cooking Instructions
BASMATI RICE 4 - 5 SERVINGS250 ml (1 cup) Tastic Rices of the World Basmati Rice, uncooked
1 1⁄2 litres (6 cups) Water
3-5 ml (1⁄2-1 tsp) SaltSTOVETOP
Bring water and salt to the boil. Add Tastic Rices of the World Basmati Rice. Boil rice for 12 minutes. Drain excess water and serve. For softer rice, add more water and cook for a further 5 minutes.
MICROWAVE
Place Tastic Rices of the World Basmati rice, boiling water and salt in a microwavable dish. Cook on high for 15 minutes. Drain excess water and rinse under cold running water. Return to the microwave and cook for a further 5 minutes.

Cooking Instructions
BONNET RICE 4 - 6 SERVINGS250 ml (1 cup) Tastic Rices of the World Bonnet Rice, uncooked
1 2⁄2 litres (6 cups) Water
3-5 ml (1⁄2-1 tsp) SaltSTOVETOP
Soak Tastic Rices of the World Bonnet rice in cold water for 15 minutes. Drain excess water and rinse lightly. Bring water and salt to the boil. Add rice. Reduce heat and simmer for 10 - 14 minutes, uncovered. Drain excess water and rinse under cold running water.
Return rice to a pot and cover with a tight fitting lid. Steam on low heat for 5 - 10 minutes. For softer rice, add more water and cook for a further 5 minutes.
MICROWAVE
Place Tastic Rices of the World Bonnet rice, boiling water and salt in a micro-wavable dish. Cook on high for 20 minutes. Transfer cooked rice to a sieve or colander and allow to stand for 5 minutes before serving.

This plump grain is ideal for risottos as it cooks to a gentle creaminess, yet retains an al dente centre. The higher the quality, the more liquid it absorbs, which can be up to four times its original volume.

Cooking Instructions
RISOTTO RICE 4 - 5 SERVINGS- 500ml (2 cups) Tastic Rices of the World Risotto Rice, uncooked
- 1 Onion, Finely Chopped
- 1.25 Litres (5 cups) Vegetable or Chicken Stock
- 30ml (2tbs) Oil
- 125ml (1/2 cup) Parmesan, Grated or Shaved
- Black Pepper, Freshly Ground
Stove:
Place stock in a saucepan over medium heat and bring to a very slow simmer. Place oil in a heavy based saucepan over medium heat. Add onion to oil and sauté. Add Tastic Rices of the World Risotto Rice to oil and onion and cook, stirring constantly until liquid has been absorbed. Repeat, only adding more stock liquid has been absorbed.
Continue adding stock until rice is soft and risotto is creamy. If you need more liquid, heat extra stock or water. When rice is almost cooked, stir through Parmesan and pepper. Cookinf time should be 35-40 minutes. Risotto should have firm but tender grains of rice. Serve Tatsic Risotto in deep bowls on a bed of steamed greens sprinkled with black pepper.

Cooking Instructions
SUSHI RICE 4 - 6 SERVINGS250 ml (1 cup) Tastic Rices of the World Sushi Rice, uncooked
375 ml (11⁄2 cups) Water
3-5 ml (1⁄2-1 tsp) SaltVINEGAR MIXTURE
15-30 ml (1-2 Tbs) Sugar 30 ml (2 Tbs) Rice vinegar
Soak Tastic Rices of the World Sushi rice in cold water for 15 minutes. Drain and allow to stand for 20 minutes. Place rice, water and salt in a pot and bring to the boil over medium heat.
Cover pot with a tight fitting lid, reduce heat and simmer for 15 - 20 minutes, or until water has been absorbed. Remove from heat and remove lid. Cover pot with a clean kitchen towel, replace lid and allow to stand for 15 minutes.
While rice is cooking, dissolve sugar and rice vinegar over a gentle heat, stirring constantly. Remove from the heat and allow to cool. Place rice in a shallow bowl and slowly add the vinegar mixture. Run a spatula through the rice, in a slicing motion, to separate the grains. Fan to ensure fast cooling. Use immediately as refrigeration will make the rice sticky and difficult to handle.

1 ½ Litres (6 cups) of Water
3-5 ML ( ½ - 1 teaspoon) Salt.
STOVETOP
Place water and salt to boil. Add Tastic Rices of the World Sella Basmati Rice. Boil the rice for 18 – 24 minutes until all the water is absorbed. For softer rice, add more water and cook for further 5 minutes. Drain excess water and serve.
